SOUTHERN UPSIDE-DOWN PECAN CAKE

This southern upside-down pecan pie is absolutely delicious! It’s decadent enough to make it ideal for any party. This homemade cake is very easy to make and always comes out moist and perfect.

INGREDIENTS

2 1/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup unsalted butter, softened at room temperature
3/4 cup granulated sugar
1 cup of brown sugar
2 large eggs, at room temperature
1 1/2 teaspoons vanilla extract
1/2 cup sour cream
1 cup of whole milk

The ingredients of the top
2 cups of toasted nuts, chopped
3/4 cup grated coconut
2/3 cup brown sugar, packed
6 tablespoons butter, melted
2 teaspoons ground cinnamon
2 teaspoons vanilla extract
1/2 teaspoon salt

INSTRUCTIONS

Preheat oven to 350°F (177°C). Line a 12×17-inch gelatin pan with aluminum foil, making sure it hangs loosely at the sides, then grease with a non-stick spray.
Mix nuts, brown sugar and 3/4 cup coconut in a small bowl. Sprinkle with cinnamon and salt and stir. Spread the nut mixture in the lined pan and spray with vanilla extract and melted butter.
Beat the flour, baking soda and salt in a large bowl. Set aside. Using a hand or foot mixer, whisk the softened butter at high speed until smooth and creamy – about 1 minute. Add the sugars and whisk at high speed for a full 3 minutes until smooth and creamy. Add one egg at a time, beating well after each addition until both are blended. Add the vanilla extract and sour cream. Scrape sides and bottom of bowl as needed.
With the mixer running at low speed, add the dry ingredients to the wet ingredients alternating with the milk. Mix each addition only until incorporated. Be sure not to over-mix the dough.
Spread the cake batter over the walnut mixture. Smooth it out in a thin, even layer. Bake for 20-22 minutes or until top is lightly browned and a toothpick inserted in the center comes out clean. Remove from oven and let cake cool in pan for about 5-10 minutes. Run a knife along the sides of the pan to loosen and invert the cake into a tray, using the foil that protrudes as needed. Allow to cool for 10-20 minutes before serving. Enjoy!
