AVOCADOS STUFFED WITH CUBES

Avocados stuffed with tacos. The perfect low-carb taco! These avocados are loaded with the BEST taco meat, cheese, tomatoes, lettuce and some sour cream. Perfect for an easy lunch or a light dinner.
Avocado is a perfect substitute for a taco shell! Not only can you enjoy the taco shells, but you can also enjoy the avocado and even get some guacamole.
1 pound of ground beef
1 tablespoon of chili powder
½ tsp Sal
¾ tsp Cumin
½ tsp Dry Oregano
¼ tsp Garlic powder
¼ tsp Onion powder
4 ounces of tomato sauce
3 avocados cut in half
1 cup cheddar cheese, grated
¼ cup cherry tomatoes, sliced
¼ cup lettuce, shredded
Add the ground meat to a medium-sized pan. Cook over medium heat until golden brown.
Drain the fat and add the seasonings and tomato sauce. Stir to combine. Cook for about 3-4 minutes.
Remove pits from avocados cut in half. Load the remaining pit crater with the taco meat. Cover with cheese, tomatoes, lettuce, cilantro and sour cream.
If you want to make a bigger area in the avocado for the ingredients, take out some avocado and set it aside to make guacamole. Then stuff with the toppings.
Serve it with some lime cauliflower and coriander rice!
