This is the best recipe for baked beans, the perfect accompaniment to pot luck, with so much flavor. These baked beans are studded with bacon, onions and peppers, and offer a sweet and delicious sauce with the perfect depth of flavor.
Ingredients
1 red onion, finely chopped
½ cup finely chopped green pepper
1 pound of crispy, cubed bacon.
½ cup ketchup
¼ cup molasses
⅔ cup of brown sugar
2 tablespoons cider vinegar
1 tablespoon Worcestershire sauce
2 teaspoons of dry mustard
60 ounces of baked beans or pork and beans

2 tablespoons of green onion
2 tablespoons of chopped bacon (reserved for cooked bacon)
Instructions
Cut the red onion and pepper into small, evenly spaced pieces. Set aside.
Cook the bacon until crisp, drain on a paper towel. Reserve some of the fat from the bacon.
Finely dice the bacon. Set aside 2 tablespoons for garnish. Set aside.
Preheat oven to 350°F, set rack to medium-low.
In a skillet, heat reserved bacon fat over medium-high heat.
Add diced red onion and green pepper, sauté until soft.
In a large bowl, combine ketchup, molasses, brown sugar, cider vinegar, Worcestershire sauce and dry mustard, and whisk together.
Add the beans, onions and green peppers.
Pour into a 9×13″ baking dish.
Bake for 2 hours, then add the chopped bacon.
Bake another hour or more until the sauce has cooked and reached the desired consistency.
Let beans stand for 5 minutes to thicken the sauce.
Garnish with reserved bacon and green onions. Serve.
