1 1/2 cups bananas, mashed, ripe
2 teaspoons lemon juice
3 cups of flour
1 1/2 teaspoons baking soda
1/4 teaspoon salt
3/4 cup butter, softened
2 1/8 cups of sugar
3 large eggs
2 teaspoons vanilla
1 1/2 cups buttermilk
1/2 cup of butter, softened
1 package (8 oz.) cream cheese, softened
1 teaspoon vanilla
3 1/2 cups of powdered sugar
1 Preheat the oven to 135ºC.
2 Grease and flour a 9 x 13 frying pan.
3 In a small bowl, mix the banana puree with the lemon juice; set aside.
4 In medium bowl, mix flour, baking soda, and salt; set aside.
5 In large bowl, beat 3/4 cup butter and 2 1/8 cups sugar until light and fluffy.
6 Add beaten eggs, one at a time, then add 2 teaspoons of vanilla.
7 Add flour mixture to buttermilk mixture.
8 Add the banana mixture
9 Pour the dough into the prepared pan and bake in the preheated oven for one hour or until the toothpick inserted in the center comes out clean.
10 Remove from oven and place directly in freezer for 45 minutes. This will make the cake very moist.
11 For the icing, whip the butter and cream cheese until smooth.
12 Beat in one teaspoon of vanilla. The best banana cake in the world
13 Add the icing sugar and beat at low speed until combined, then at high speed until the glaze is smooth.
14 Sprinkle over the cooled cake.
15 Sprinkle chopped walnuts over the icing, if desired (or hearts!)
