THE BEST EGGNOG COOKIES – SOFT AND CHEWY

Eggnog cookies are the best recipe. They are soft, chewy and full of cinnamon flavor. Better yet, they are easy to make. This eggnog cookie recipe will be a big hit at your parties or cookie exchanges!

INGREDIENTS

2 1/4 C of flour
1 teaspoon of baking powder
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1 1/4 C sugar
3/4 C of softened salted butter
1/2 C of eggnog
1 teaspoon of vanilla
2 large egg yolks

INSTRUCTIONS

Preheat the oven to 350 degrees. Line the cookie sheets with parchment paper.
Combine the flour, baking powder, cinnamon and nutmeg in a small bowl.
Using an electric mixer, beat the sugar and butter in a large bowl.
Add the eggnog, vanilla and egg yolks, beating at medium speed until smooth.
Gradually add the dry ingredients to the wet ones. Beat at low speed until they are mixed.
Using a small ice cream spoon, measure the dough and drop it by spoonfuls on the prepared cookie sheets.
Leave 1 inch between each cookie.
Sprinkle lightly with additional nutmeg.
Bake at 350 degrees for 23-25 minutes. (Or until bottoms turn light brown).
Allow cookies to cool slightly before placing on a rack.
Allow cookies to cool completely on a wire rack.
