Two Ingredient White Chocolate Mousse

Prepare this smooth, creamy and decadent dessert in a few minutes with only two ingredients.

INGREDIENTS

1 1/2 cups heavy cream, cold and divided
1 cup of white chocolate chips

INSTRUCTIONS

In a microwave container, heat 1/2 cup of the heavy cream for 50 seconds (depending on the power of the microwave).
Add the white chocolate chunks to the cream and stir until the chunks have melted. This will take 1 to 2 minutes. Let it cool down.
Pour the remaining 1 cup of heavy cream into a medium bowl. Using a hand or stand mixer, whip until smooth peaks form (Optional: Store half of the smooth whipped cream in a small bowl and refrigerate to use as a mousse topping). Continue whipping until hard peaks form.
Using a large spatula, slowly add half of the whipped cream into the white chocolate mixture. Gently fold in the rest of the whipped cream.
Divide the mixture between 4 molds or cocktail glasses (I used lowball glasses). Refrigerate for at least one hour, (until evening), before serving. Cover with the reserved or cold whipped cream and white chocolate shavings.
