2 Ingredient Pumpkin Cupcakes!

I’ve seen this idea floating around the internet, and you know, I had to try it out since it’s that time of year!


1 yellow cake or spice cake mix
One 1-15 ounce can of pumpkin
Nuts, walnuts or chocolate chips (optional)
Frosting/Icing of your choice (also optional)


Preheat to 350F
In a large bowl throw the entire can of pumpkin
Then add the (dry) cake mix
Mix until well combined
If you choose to add nuts of any kind, add them to the dough now.
If you don’t have a pampered cooking pan like I used above, use liners or spray with non-stick cooking spray.
Put 2 tablespoons in each cup.
Bake at 350F for 20-25 minutes or until a toothpick comes out clean.
Remove from oven, and let cool for about 10 minutes before frosting (if you choose to frost)
These also freeze VERY well.
