BACON WRAPPED ONION RINGS

These bacon-wrapped onion rings are everything you could want and more than one side dish. If you’re a fan of onion rings, don’t pass up this recipe! It’s a little ring of pure unadulterated goodness (wrapped in bacon!).

INGREDIENTS

2 yellow onions
1 pound of bacon
2 tablespoons of the signature Sweet Rub

INSTRUCTIONS

Pre-warm up the smoker. Preheat the smoker to 275 degrees F.
Cut onion into rings. Slice onions into 3/4 inch thick slices. Spread the rings so that two rings remain together, this will give you stronger onion rings that will hold up during cooking. You will probably get two rings from each slice. Discard or save the smaller interior sections of the onions for broth, soup, etc.
Wrap the onion rings in bacon and season. Wrap each onion ring with a slice of bacon. Larger rings may need two pieces of bacon to completely cover them. Tuck in the tips of the bacon, or secure them with a toothpick, if necessary. Season all sides of the bacon-wrapped onion ring with a sweet dressing.
Smoke onion rings wrapped in bacon. Place onion rings into smoker and close lid. Plan to smoke for 90 minutes total. Turn onion rings at the 45 minute mark, then begin checking for readiness after 75 minutes. If you like softer bacon, you can remove them sooner, or if you like crummier, slightly crunchier bacon, leave them a little longer. After 90 minutes, you will have a good yield, bite the bacon with a little crunch. If you want crisper bacon, you can increase the heat on your grill or smoker to 400 degrees F during the last few minutes, just keep an eye on the sugars in the seasoning so they don’t burn.
Cool and serve. Remove the bacon-wrapped onion rings from the smoker and allow to cool slightly before serving. Great as a side dish, appetizer or as an ingredient in a hamburger.
