Baileys Chocolate Mousse is a delicious and spongy chocolate mousse, with the sweet taste of Baileys Irish Cream. This easy dessert recipe is perfect for St. Patrick’s Day!
2 teaspoons unflavored gelatin
2 tablespoons of cold water
1/4 c. of boiling water
1/2 c. of sugar
2 spoonfuls of cocoa powder for a more intense chocolate flavor, add 1 more spoonful.
1 1/2 c. of very cold heavy cream
1/2 c. Very cold Baileys Irish cream
1 teaspoon of vanilla
Before starting, prepare the bowl and the mixers by placing them in the freezer for 15 to 20 minutes to cool down. Sprinkle the gelatin over cold water in a small bowl; stir and let stand 1 minute to soften. Add boiling water; stir until gelatin is completely dissolved. Let stand to cool. Stir sugar and cocoa in a large bowl; add heavy cream. Beat at medium-high speed until stiff peaks form; gradually pour in Baileys, vanilla and gelatin mixture, beating continuously at high speed until well blended and smooth peaks form. Leave to stand for 5 minutes to thicken. Place on serving plates and place in refrigerator to cool. (For faster setting mousse, cool bowls before filling)
Chill 1 hour or until ready to serve.
