Baked coconut has a crispy top that gives way to a soft, creamy centre. It has an incredible smell and you’ll be ready to devour it as soon as it comes out of the oven.
1 14-ounce can of condensed milk
3 large eggs
½ cup of coconut milk
⅓ cup of milk
2 cups of grated coconut
Preheat the oven to 350° F.
In a large bowl, whisk together the condensed milk, eggs, coconut milk and grated coconut.
Pour the mixture into a baking dish greased with butter.
Bake for 25-30 minutes or until golden brown.
Serve hot with your favourite ice cream.
