This salad is filled with avocados, tomatoes, red onion and cilantro to create a fresh summer flavor.
3 ripe avocados
2 cups of cherry tomatoes cut in half
½ cup sliced red onion
¼ cup chopped fresh cilantro or parsley
2 tablespoons of olive oil
1 clove of garlic, minced
salt and pepper to taste
Cut tomatoes and onions. Put them aside.
Cut the avocados in half, remove the pits and dice. Squeeze the fresh lime over the avocados and gently mix them to combine.
Add the rest of the ingredients and stir gently.
Let stand 5 to 10 minutes before serving.
