BBQ Chicken Grilled Cheese

Grilled chicken and cheese sandwiches are the perfect complement to any table. French bread with garlic butter is fried to perfection and combined with the tasty flavors of barbecue chicken and creamy melted havarti cheese.

INGREDIENTS

BARBECUE CHICKEN
2 tablespoons of olive oil
1 small red onion, thinly sliced
3 cloves of garlic, minced
2 1/2 cups of grated roasted chicken
1/2 teaspoon of paprika
1 teaspoon Worcestershire sauce
1 cup of BBQ sauce
12 slices of Havarti cheese

GARLIC BUTTER BREAD
1/4 cup of butter
2 cloves of garlic, minced
2 teaspoons parsley, chopped
12 slices of sourdough bread or sturdy white bread

INSTRUCTIONS

BARBECUE CHICKEN
Heat the oil in a large frying pan over medium heat. Cook onions until soft, about 2 minutes. Add garlic and cook until fragrant, about 30 seconds. Add shredded chicken, smoked paprika, Worcestershire sauce and bbq sauce. Stir to combine and cook until heated through, about 2-3 minutes.

GARLIC BUTTER BREAD
Add the butter, garlic and chopped parsley in a medium bowl. Microwave until melted
Place 12 slices of bread on the work surface. Spread the melted butter mixture on each piece.
Turn each piece and 6 of the bread slices with 6 of the cheese slices and the bbq chicken mixture, dividing them evenly. Add the remaining cheese over the top of the chicken and over the remaining 6 slices of bread (both the bottom and the top should have the butter side exposed).
Place the buttered sandwiches in a large non-stick pan. Place over medium heat and cook until the bottom of the sandwiches are golden brown, 3 to 5 minutes. Turn sandwiches over, reduce heat to medium-low and continue cooking until bottom is golden brown and cheese is melted, 3 to 5 minutes more.
