Beef and Cabbage Soup

Cabbage soup is fast to make, healthy, low in carbohydrates and full of delicious flavor! Made with minimal ingredients, filled with cabbage, carrots, onions, garlic and tender meat, it crumbles! Low in fat, low in carbs, healthy, diet-approved and so super-full you won’t believe how good it is!

INGREDIENTS

2 tablespoons of olive oil
1 large onion, chopped
1 pound 500 grams of rib eye or Scotch fillet, cut into 1 inch pieces (trimmed of visible fat)
1 stalk of celery, chopped
2 large carrots peeled and diced
1 small green cabbage cut into bite-sized pieces
4 cloves of garlic, minced
6 cups of meat or broth
3 tablespoons of fresh chopped parsley and more to serve
2 teaspoons each of dried thyme and rosemary (or dried basil and oregano)
2 teaspoons onion or garlic powder
Salt and freshly cut black pepper to taste.
