Beer Brownies

These beer brownies are a great way to treat dad… or anyone who likes delicious chocolate brownies! (They may be Dad’s favorite brownies!

INGREDIENTS

1 1/2 cups (188g) unbleached all-purpose flour
1/2 cup (64g) unsweetened cocoa powder
1 teaspoon of espresso powder
1/2 teaspoon kosher salt
3 large eggs at room temperature
1 1/2 cups (300g) of sugar
1 teaspoon of pure vanilla extract
1/2 cup (4 ounces or 118 ml) canola oil
4 tablespoons unsalted butter, melted
1/2 cup (4 ounces or 118 ml) of beer – I used a mild IPA
1 cup (8 ounces) semi-sweet chocolate chips

INSTRUCTIONS

Preheat oven to 350°F. Spray a 9×9 baking tray and line with parchment paper. Make sure the paper rises up the sides, this will help make it easier to remove.
Beat the flour, cocoa powder, coffee powder and salt in a large bowl. In another bowl, beat the eggs, sugar, vanilla and canola oil.
Add the dry ingredients to the egg mixture and stir well to combine.
Mix the melted butter and beer, stirring until well combined.
Add the chocolate chips. Save some for the top. Try not to mix the brownie dough too much.
Pour the dough into the prepared pan and cover it with the remaining chocolate chips.
Bake 30-32 minutes until brownies are slightly firm to the touch.
Let them cool in the pan for 5 minutes and then remove them and place them on a wire rack to cool completely. (although they are great when hot!)
