This southern fried chicken batter requires the pieces to be quickly brined and then dipped into a seasoned batter for a crispy southern-style crust. As simple as that can be. This is the real deal.
2 beaten eggs
1 cup of milk
2 teaspoons of paprika
1/2 teaspoon poultry seasoning
4 teaspoons garlic salt
2 teaspoons black pepper
2 cups of all-purpose flour
Beat the egg and milk together in a bowl.
Combine the flour with the garlic salt, pepper, poultry seasoning and paprika in a large plastic bag.
Put the chicken in the bag, seal it and shake it to cover.
Dip the flour-covered chicken into the egg mixture and again into the flour mixture.
Heat oil in a skillet to 365 degrees F. Brown the chicken all over in the hot oil.
Lower the heat to medium-low and give the chicken another half hour or until well cooked.
Drain on paper towels and serve.
