Buffalo Chicken Stuffed Shells are an easy to make dinner idea, loaded with cheese, chicken and a homemade buffalo sauce. If you like stuffed shells, be sure to check out my three cheese filled shells. (a fan favorite!)
1 package (12 oz.) jumbo shells, cooked al dente
3 cups of roasted chicken, shredded
3 tablespoons of dry, homemade ranch dressing, or 1 1/2 (1 ounce) packages of store-bought ranch dressing
1/2 cup buffalo sauce
8 ounces cream cheese, at room temperature
1 cup grated mozzarella cheese, divided
2 teaspoons of salt
1 teaspoon of ground black pepper
1 cup grated white cheddar cheese
2 tablespoons of ranch dressing, for the topping
2 tablespoons of buffalo sauce, for the topping
Preheat the oven to 350°F.
Cook pasta until al dente, according to package instructions. Drain it.
In a large bowl, mix chicken, ranch dressing, buffalo sauce, cream cheese, half the mozzarella, salt and pepper until well combined.
Fill each jumbo shell with the chicken mixture and place in a greased 9×13 inch baking dish.
Cover with reserved mozzarella and white cheddar cheese. Bake for 15-20 minutes, or until bubbly.
Sprinkle with ranch dressing and buffalo sauce.
