CHILI RELLENO CASSEROLE

Layers of cheese, ground beef, corn tortillas and of course green chilies make this casserole a family favorite. It doesn’t require any pepper stuffing, it’s a very quick and easy casserole that gives you all the flavors of stuffed chiles with hardly any work.

A delicious family meal that is easy to make with the best ingredients. The answer to your midweek dinner blues, or a good breakfast. Preparation is fast, the food is full, and the mess is minimal.

Ingredients

27 ounces green chilies 1 can, whole chilies, preferably Hatch brand
1½ pounds of ground meat
1 onion, finely chopped
1 pound of grated cheese
12 corn tortillas
16 ounces of refried beans

TOPPING
4 eggs, well beaten
¼ cup of flour
½ cup evaporated milk small can
2 teaspoons of hot sauce
¼ teaspoon of paprika
¼ teaspoon onion powder

Instructions

Prepare a 9 x 13-inch skillet by spraying it with cooking spray, and set it aside.
In a large bowl, mix the eggs, flour, evaporated milk, hot sauce, paprika and onion powder, whisking until combined. Set aside.
In a large skillet, brown ground beef over medium heat, with onions. Cook until onions are soft and meat is browned. About 5-7 minutes.
Add refried beans to skillet with ground beef and stir in beef and refried beans until fully incorporated.
Cut tortillas into 1-inch wide strips. Place ½ tortillas to form a layer of the strips on the bottom of a greased 9×13 inch baking pan.
Layer ½ green chilies over the strips evenly.
Layer ½ the cheese, then add a second layer of tortillas, then another layer of green chiles.
Pour the egg mixture on top.
Spread the meat and beans over the egg mixture.
Sprinkle the remaining cheese on top.
Bake at 375 degrees for 45 minutes.
