This is the best creamy pasta salad made with cucumbers, peppers, broccoli, cherry tomatoes, red onions, cheddar cheese and a creamy ranch dressing full of flavor.
A 16-ounce packet of fusilli or rotini pasta.
1 1/2 cups of mayonnaise
1/2 cup of milk
An 11-ounce packet of ranch dressing…
1 cucumber, quartered and thinly sliced
2 cups of chopped broccoli flowers
2 cups of asparagus tips removed and chopped
2 chopped peppers
1 cup cherry tomatoes, cut in half
1/4 cup thinly sliced red onion
3/4 cup matchstick or shredded cheddar cheese
Prepare the pasta according to the package.
While waiting for the pasta to boil, prepare your cucumber, broccoli, red onion, asparagus, bell pepper, tomatoes and cheddar cheese. Set aside.
To make the dressing, whisk together the ranch dressing, mayonnaise and milk. Mix until all lumps are gone.
Once the pasta is done, drain it and let it cool down for a couple of minutes. Once cooled, mix the sliced cucumber, chopped broccoli, chopped asparagus, chopped pepper, halved tomatoes and cheese.
Then pour the dressing over the pasta salad, and toss gently until well combined. Cover and refrigerate for at least 1-2 hours before serving.
Just before serving, give your Creamy Ranchero Pasta Salad a couple more tosses to mix into any of the dressings that have settled to the bottom.
