Chocolate Toffee Cashew Clusters

Ingredients :

3 cups of semi-sweet chocolate chips
1 tablespoon of solid vegetable shortening or coconut oil
3 cups of salted cashews
1 1/4 cup of split candy

Instructions

In a microwave container, melt the chocolate pieces and the butter. Melt 50% of the energy in 30-45 second increments, stopping to stir each cycle. Repeat until completely smooth.
Use a non-stick spatula to mix in the cashews and 1 cup of caramel pieces. Mix until all the nuts are covered.
Spread wax paper on kitchen table or cover 2 standard baking sheets.
Use a spoonful to drop the clusters on the wax paper at least 1 inch apart. Sprinkle the top with the remaining pieces of caramel while the chocolate is still wet.
Let it rest until it hardens or refrigerate it to allow it to harden more quickly.
Store tightly closed at cold or room temperature.
If refrigerated, bring to room temperature for serving.
