SKILLET MEXICAN STREET CORN

Mexican fried street corn is a quick and easy addition to any dinner. Everything you like about Mexican corn on the cob, but much easier to serve and enjoy! Corn butter with a creamy sauce, a touch of lime and cotija cheese.

PREPARATION TIME: 5 minutes
COOKING TIME: 10 minutes
TOTAL TIME: 15 minutes

INGREDIENTS :

2 tablespoons of butter
4 cups of frozen corn
1/4 cup mayonnaise
1/4 cup sour cream
juice of 1 lime
1 teaspoon of ground cumin
1/2 teaspoon chili powder
1/2 cup of cotija cheese
1/4 cup cilantro or green onions

HOW TO DO IT:

Melt the butter in a frying pan over medium-high heat. Add the frozen corn. Cook until corn is hot, stirring often.
Add mayonnaise, sour cream, lemon juice, cumin and chili powder.
Add half of the cotija cheese, stirring until melted.
Sprinkle the top with the remaining cheese and garnish with some chili powder and cilantro or green onions.
