Chocolate Turtle Apple Slices

Ingredients


2 very large Fuji apples
3 1/2 cups semi-sweet chocolate chips (I used Nestle)
1 tablespoon of coconut oil (I used refined coconut oil so it doesn’t taste like coconut.)
1 cup of candy, melted (I used Kraft candy)
Chopped nut


Instructions

Cut the apples into 1/2″ pieces. (It is very important to have a good quality chef’s knife. I love Wusthof.) With a knife make a small slit at the bottom of each apple slice to make it easier to insert a popsicle stick. Insert a popsicle stick into each apple slice. Set aside.

In a medium bowl, melt the chocolate pieces in the microwave on high for about 2 minutes (at 30-second intervals, do not overheat because the chocolate will burn).* Add the coconut oil until smooth. Dip the apple slices into the chocolate and place them on a parchment-lined cookie sheet. (I used a 13 “x18” half sheet.)

Place the candy in a microwave-safe container and microwave on high for 45-60 seconds. Stir until smooth. Sprinkle melted caramel over chocolate and sprinkle with nuts.
Refrigerate for approximately 1 hour. Serve and enjoy immediately. Apples are best on the first day. Store them in the refrigerator.
*For best results, follow the instructions on the chocolate chip package to melt the chocolate and the same for the caramel. Follow the directions on the caramel package for melting caramels.
Note: If you are concerned about biting into the seeds of an apple, remove them before dipping the apple slice into the chocolate.
