Cream Cheese Cranberry Loaf

While pumpkin bread is a classic dessert, breakfast or snack during the autumn months, there’s really no equivalent gift for winter… until now. This bread is perfectly moist, sweet and sour, and is the perfect thing to do when you have friends or family coming over, or for when you just need a little pick-me-up to start or end your day. Full of lots of love (ahem and blueberries and cream cheese), this bread is the best thing to start the morning with.

Although baking may be at the bottom of your to-do list, if it’s even on the list, it’s worth the time and effort (which in this case is minimal) to make this blueberry cream cheese bread. It will get you in the Christmas spirit and bring your family together, since no one wants to miss a slice of this stuff! Eat it alone, sprinkle it with powdered sugar, cover it with a little more cream cheese, whatever works for you – try it!

INGREDIENTS

2 cups of flour
2 cups of blueberries, fresh or frozen
1 1/2 cups of sugar
1 cup (2 sticks) unsalted butter, at room temperature
1 package of cream cheese, at room temperature.
4 eggs, at room temperature
1 1/2 teaspoons vanilla extract
1 1/2 teaspoons baking soda
1/2 teaspoon salt

PREPARATION

Preheat oven to 350º F and lightly grease a 9×5-inch bread pan with butter or nonstick spray.
Put the butter, cream cheese and sugar in a large bowl or a mixer, and then, one by one, beat the eggs and vanilla.
In a separate bowl, beat the flour, baking soda and salt until combined. Gradually mix the dry ingredients with the wet ingredients, stirring until incorporated.
Gently stir in the cranberries, then pour the mixture into a greased baking dish. (You can also use 2 bread pans, if desired).
) Place in oven and bake for 60-70 minutes, or until toothpick inserted in the center comes out clean.
Remove from oven and let cool at least 15 minutes before serving. Enjoy!
