Crockpot Lasagna

Lasagna has become so much easier with this slow-cooked lasagna! On top of everything else in the pot, even uncooked noodles!

Want to hear something sad? My dad and big brother don’t eat cheese! They don’t touch it. No cheddar, no mozzarella, no parmesan… nothing! How can you live a life without cheese?!

That means lasagna, one of the most delicious meals of all time, was a rare specialty in our house. Every time my mom made it, (usually when dad was out of town) the rest of us were SO excited! She’d eat it in minutes!

She typically made this classic Italian lasagna recipe. It’s a totally authentic lasagna that uses a simple white béchamel sauce instead of ricotta or cottage cheese. It’s amazing, but it requires a little preparation and work.

Now that I have a family of my own I’m always looking for ways to make meals easier or meals that I can prepare in advance or throw into my slow cooker.

This slow-cooking lasagna is a WINNER! All of the time-consuming parts of the lasagna, the many dishes and all of the preparation, have been eliminated.

I love that this recipe doesn’t even require you to cook the lasagna noodles ahead of time. You can use regular lasagna noodles, and then just put a layer of sauce, noodles and cheese. The lasagna takes about 4 or 5 hours to simmer. If you are in a hurry, you can simmer the lasagna on top and it will be ready in half the time.


1 pound of ground beef
Lasagna noodles
1 jar of spaghetti sauce
1 1/2 cups cottage cheese
1 1/2 cups grated mozzarella cheese
2 tablespoons of grated Parmesan cheese


Ground beef and drain.
Spoon 1 cup spaghetti sauce into the bottom of a 4-quart pot.
Mix remaining sauce with meat.
Place 2 uncooked lasagna noodles in the sauce in the electric cooker.
Spread 1/3 of the meat mixture over the noodles.
Spread 3/4 cup cottage cheese over the meat.
Sprinkle 1/2 cup mozzarella cheese over the cottage cheese.
Add another layer of uncooked noodles, 1/3 of the meat mixture, the rest of the cottage cheese and 1/2 cup of mozzarella cheese.
Add another layer of raw noodles, the meat mixture and the mozzarella cheese.
Sprinkle the Parmesan cheese on top.
Simmer for 4 hours.

If it cooks much longer, it’s a little bit of a mess.
