Crockpot Meatloaf

This Crockpot Meatloaf is a great way to enjoy classic comfort food, with less stress, and without tying up the oven.

Ingredients

2 pounds of ground meat
1 large yellow onion, finely chopped (divided)
2 boxes (6 ounces each) of dry stuffing mix (I like to use the tasty herb variety)
1 ⅓ cup of whole milk
2 large eggs
2 tablespoons of ketchup icing (see below)
1 teaspoon kosher salt
½ teaspoon black pepper

Ketchup glaze with brown sugar
1 ½ ketchup cups
¼ cup light brown sugar
2 tablespoons of finely chopped onion
2 teaspoons apple cider vinegar
½ teaspoon black pepper

Instructions

In a small mixing bowl, mix all the ingredients of the ketchup glaze with brown sugar (reserving the rest of the chopped onion for the meatloaf itself), stirring or beating to combine well. Set aside.
Tear off a large strip of aluminum foil (the heavy-duty one works well), and press it to the bottom and two sides of a 6 quart or larger slow cooker. Spray lightly with nonstick cooking spray, and set aside.
Add ground beef, remaining chopped onion (from step 1), stuffing mixture, milk, eggs, 2 tablespoons of glaze, salt and pepper. Use your hands to mix until well combined (being careful not to over-mix).
Give it an oval shape and place it in the pot lined with aluminum foil. Cover with ½ cup of the glaze, cover and simmer for 6 hours.
When finished cooking, carefully remove the meatloaf, using the protruding aluminum foil, and place it on a baking sheet. Cover with ⅔ cup of the glaze and roast until the glaze is sticky and bubbly.
Serve in slices, with the remaining glaze sauce served on the side to drizzle.

Recipe Notes

TO MAKE IN THE OVEN
Make the glaze as indicated and mix the meatloaf as indicated. Shape the meatloaf, spread it with the glaze and transfer it to a greased meatloaf tray or baking dish. Bake in a 350°F oven for 60-70 minutes.
