This cheesy Doritos casserole is made with ground beef, tomatoes, chilies, sour cream and more! It’s an easy taco casserole recipe full of salty goodness.
Ingredients:
2 tablespoons of olive oil
1 cup yellow onion, diced, one medium onion.
2 cloves garlic, minced
1 pound of lean ground beef
1 package of low-sodium taco seasoning
1 10-ounce can of tomatoes and Ro-Tel chili peppers.
1/2 cup salsa
1 cup of sour cream
1 1/2 cups shredded cheddar cheese
1 bag (9.75 ounces) of Doritos, very flattened
Optional garnish: diced tomatoes, cilantro, jalapeños, avocado.
Instructions
Preheat the oven to 350°F.
In a large skillet, heat oil over medium heat. Add onions and cook for 5 minutes. Add garlic and ground beef and cook until meat is no longer pink, breaking up lumps with a wooden spoon.
Add taco seasoning, Ro-tel and salsa. Cook for 5 minutes, stirring occasionally.
Add the sour cream evenly and then remove the mixture from the heat.
Pour half of the meat mixture into the bottom of a 9×13 frying pan. Cover with 1/2 cup cheese and half of the Doritos. Repeat the process with remaining ingredients, covering with remaining 1/2 cup cheese.
Cover the pan with aluminum foil and bake for 20 minutes.
Remove the aluminum foil and bake for 10 more minutes.
Garnish as desired and serve hot.
