EASY FUNERAL POTATOES RECIPE

Looking for a delicious potato side dish that can be made quickly? This easy funeral potato recipe is perfect! Potatoes in a creamy sauce covered with buttery corn flakes cereal and then baked until hot and bubbly, great for any occasion and always a big hit!

INGREDIENTS

3/4 cup butter divided
1 medium onion, chopped
2 pounds of French fries cut into cubes, not shredded, defrosted.
2 cans of condensed cream of chicken soup (about 10.75 ounces per can)
2 cups of sour cream
2 cups of grated cheddar cheese
1/2 teaspoon of salt
1/2 teaspoon black pepper
3 cups of lightly crushed corn flakes

INSTRUCTIONS

Preheat the oven to 350F.
Heat one tablespoon of butter in a skillet over medium heat until melted. Add chopped onion and sauté until soft and translucent.
In a large mixing bowl, combine cooked onions, French fries, 1/2 cup (1 stick/8 tablespoon) melted butter, cream of chicken soup, sour cream, grated cheddar cheese, salt and pepper. Place this mixture in a greased 9×13 inch glass baking dish.
In a skillet, heat the remaining 3 tablespoons of butter over medium heat until melted. Add the slightly crushed corn flakes cereal and sauté, stirring often, until lightly browned; about 2-3 minutes. Sprinkle the browned cornflakes over the pan.
Bake the pan for 40-45 minutes at 350F. Cool slightly before serving.
