These easy home fries are the ultimate comfort food, and we love to make them for an easy breakfast!
▢3 medium red potatoes about 1 ¾ pounds
▢3 tablespoons of divided butter
▢1 chopped onion
▢1 tablespoon of olive oil
▢½ teaspoon of seasoned salt
▢pepper to try
▢parsley for the garrison
Rub the potatoes (peel if desired) and cut them into cubes from ¾”.
Put the potatoes in a pot with cold water and bring them to a boil. Once they are boiling, let them cook for about 4-6 minutes or until they are slightly tender when pricked with a fork. Drain the potatoes well.
Meanwhile, melt 1 tablespoon of butter and the onion in a large skillet over medium heat. Cook the onion until it is tender. Remove the onion from the pan and set it aside.
Add 1 tablespoon of butter and olive oil to the pan. Add the potatoes, salt and seasoned pepper. Cook until golden brown, stirring occasionally, about 15-20 minutes, adding more butter if necessary.
Add the onions back to the pan and cook for 2-3 minutes more. Serve hot.
