Grilled Lamb Chops with Roasted Baby Potatoes

Ingredients:

  • 8 lamb chops
  • 1 pound baby potatoes, washed
  • Olive oil
  • Salt and freshly ground black pepper
  • Fresh herbs (such as rosemary, thyme, or parsley)
  • 4 cloves of garlic, minced
  • Optional: baby carrots or other vegetables

Marinade for Lamb Chops:

  • 2 tablespoons olive oil
  • 2 tablespoons fresh lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon fresh rosemary, chopped
  • 1 teaspoon fresh thyme, chopped
  • Salt and pepper to taste

Instructions:

  1. Marinate the Lamb Chops: In a bowl, combine olive oil, lemon juice, minced garlic, rosemary, thyme, salt, and pepper. Place the lamb chops in a dish or large ziplock bag and pour the marinade over them. Ensure each chop is well-coated. Marinate for at least 1 hour, or up to overnight in the refrigerator.
  2. Prepare the Potatoes: Preheat your oven to 400°F (200°C). Toss the baby potatoes with olive oil, salt, pepper, and any additional seasonings you prefer. If you’re using baby carrots or other vegetables, you can mix them in with the potatoes. Spread them on a baking sheet in a single layer.
  3. Roast the Potatoes: Place the potatoes in the oven and roast for about 20-30 minutes, or until they are tender and have a nice golden color. Halfway through, you can toss them gently to ensure even cooking.
  4. Grill the Lamb Chops: While the potatoes are roasting, take the lamb chops out of the refrigerator to come to room temperature. Heat a grill or grill pan over medium-high heat. Grill the lamb chops for 3-4 minutes on each side for medium-rare, or until they reach your desired level of doneness.
  5. Rest the Lamb Chops: Once cooked, remove the lamb chops from the grill and let them rest for a few minutes. This helps the juices redistribute, making the meat more tender and flavorful.
  6. Serve: Arrange the lamb chops on a serving platter. Check the potatoes and vegetables for doneness, and once ready, add them to the platter around the lamb chops. Garnish with fresh parsley.
