Ground Beef Stuffed Pepper Skillet

This pepper pan filled with ground meat is full of all the flavors of traditional stuffed peppers, but it’s done in a single pan in less than 30 minutes!

I thought it was time to share another frying pan dinner with you since it’s back-to-school season and all. There’s nothing better than a quick and easy recipe that only makes one pan dirty. Fewer dishes to win!

Ingredients

1 pound of ground beef
1/2 onion, diced
3 cloves of garlic, minced
1/2 cup green pepper
1/2 cup red pepper
14.5 ounces of tomatoes
3/4 cup white rice, I use Jasmine
2 cups of meat broth
2 tablespoons of tomato paste
1 teaspoon Italian seasoning
1/2 teaspoon salt
1/4 teaspoon black pepper
1 1/2 cups of cheese
1 tablespoon of parsley

Instructions

Brown the ground beef with the onion and garlic in a frying pan over medium heat until the ground beef is fully cooked, crumbled and no longer pink. Drain and discard any fat. Return the pan to the heat and add the peppers, diced tomatoes, rice, beef broth, tomato paste, Italian seasoning, salt and pepper. Stir to combine and bring mixture to a boil.
Reduce heat to low, cover and simmer for about 18 minutes, until rice is cooked through.
Sprinkle the rice with a fork and cover with the grated cheese. Cover again and allow cheese to melt over low heat. Garnish with fresh parsley and enjoy!
