Mandarin Orange Salad

This tangerine salad always shows up at our family gatherings and is so delicious. It comes from my aunt’s “Favorite” cookbook and everyone loves it! In her original recipe, she also adds green onions, mushrooms, avocado and tomatoes, however my family prefers the orange salad with only tangerines, cranberries and nuts.

This spinach salad with tangerines and oranges is so versatile… you can add anything and it would still be just as delicious. Just make sure you keep the tangerines because that’s what the salad recipe does. It’s SO good!

INGREDIENTS:

1 package of instant vanilla pudding mix (use dry). I would use no sugar.
1 large can crushed pineapple (not drained)
2 medium/large cans Mandarin Oranges (drained)
1 8-ounce package of Cool Whip (and you could use it without the fat)

Instructions:

Mix Cool Whip and instant vanilla pudding together (DO NOT make the pudding, just use it dry).
Add crushed pineapple without draining and both cans of Tangerine Oranges drained. (Use as many tangerines as you like, more/less) Save a few tangerines to decorate the top of the salad. Refrigerate until it thickens again, maybe a couple of hours before you need to use it.
Use it as a side dish with a meal or serve it with ice cream for dessert!
You can make this healthier by choosing a mixture of low-sugar or sugar-free instant pudding and a cold whip, and fresh tangerines.
I especially like the cold whip for my salad as the original.
Try it several times to see what looks best on you.
