Lemon Brownies are my new favorite dessert. Covered with a delicious lemon glaze, they are the perfect blend of fresh lemon and sweetness.
1 C unsalted butter, softened
1 1/2 C of sugar
2 tablespoons lemon peel
4 large eggs
2 tablespoons fresh lemon juice
1 1/2 C all-purpose flour
1 teaspoon baking powder
LEMON ICING INGREDIENTS
1 1/2 C powdered sugar
3 tablespoons fresh lemon juice
4 tablespoons of lemon peel
Preheat the oven to 350 degrees and line a 9×13 baking tray with parchment paper.
Using a large bowl, beat the flour and baking powder
Using a stand mixer, beat the butter, sugar, lemon juice and lemon peel until light and fluffy.
Beat in the eggs, one at a time until they combine
Gradually add the dry ingredients until they combine
Pour the dough into the pan and bake in the oven for 25-28 minutes or until a toothpick with wet crumbs comes out. Be sure not to bake too long.
Allow to cool completely on the counter
Using a large bowl, beat the powdered sugar, lemon juice and lemon peel until combined.
Pour the icing over the lemon bars and spread it evenly
Let it harden overnight before you enjoy it!
