LUNCH LADY BROWNIES

The lunch lady’s brownies are the best dessert ever! These fudge brownies with homemade chocolate icing on top are everyone’s favorite.

Remember those chocolate brownies in elementary school? When they were on the menu, everyone was so excited! So far, I’ve never seen them at my kids’ school, but given the amount of sugar in them, it makes perfect sense.

Ingredients:

1 cup of melted butter
½ cup unsweetened cocoa powder
2 cups of all-purpose flour
2 cups of granulated sugar
4 eggs
4 teaspoons vanilla extract

Ingredients of the chocolate icing:
¼ cup of butter
¼ cup of milk
¼ cup unsweetened cocoa powder
3 cups of powdered sugar

Instructions

Brownie Directions:
Preheat the oven to 350 and line a 9×13 baking dish with aluminum foil. Spray aluminum foil with cooking spray.
Melt two sticks of butter and mix with cocoa powder with an electric mixer until smooth.
Add the sugar and flour and mix.
Add the eggs and vanilla and mix again.
Pour the dough into the baking dish and bake for 25 minutes.
While the brownies are cooling, make the icing.

Instructions Frosting :
Using a mixer, combine all ingredients and beat until smooth.
Frost the brownies after they have cooled about 75% of the way, but are still slightly warm.
Place brownies in the refrigerator to cool completely before slicing.
