MINI BANANA PUDDING CHEESECAKES

Wait till you try these mini cheesecakes with banana pudding. With a unique twist on flavor, these mini cheesecakes are a combination of a delicious homemade pudding and a rich, creamy cheesecake. This simple dessert is a combination made in heaven.

INGREDIENTS

2 cup of whole milk
1/4 cup of sugar
2 large egg yolks
3 TBSP corn starch
1 teaspoon of banana extract
1/4 teaspoon kosher salt

Graham Cracker Cheese Cake Crust Ingredients
¾ cup graham cracker crumbs
1 ½ spoonful of sugar
¼ cup unsalted butter, melted

The filling of the cheesecake
2 – 8 oz of softened cream cheese
½ cup of sugar
½ cup of sour cream
¾ teaspoon pure vanilla extract
⅛ teaspoon kosher salt
2 large eggs

Homemade whipped cream
1 cup heavy whipped cream
¼ cup of powdered sugar
1 teaspoon pure vanilla extract
Cinnamon to sprinkle on top of the whipped cream
Mini vanilla cookies for garnish

INSTRUCTIONS

Directions for banana pudding
In a medium saucepan, beat the sugar, cornstarch, salt, milk, banana extract and egg yolks.
Cook over medium heat, stirring frequently. Cook until bubbly and
the mixture begins to thicken, about 6-8 minutes. Remove from heat.
Transfer pudding to serving bowl or individual cups. Chill in the refrigerator for a few hours
