Ingredients
2 8oz pkgs cream cheese (softened at room temperature)
-3/4 cup of sugar
-3 eggs (large)
-1 teaspoon vanilla extract
-1 tablespoon of lemon juice (freshly squeezed, if possible)
-Dash or 2 lemon peel (optional)
-Mini Nilla Wafers (REGULAR! None of that LowFat shit..)
-1 can of cake filling of your choice (Strawberry always wins)

Fill a mini cupcake pan with mini inserts and place your mini wafers with the rounded side up.
-Put all the ingredients together: cream cheese, sugar, extract of your choice, eggs, lemon juice and lemon peel, if you choose to use it.
-Create everything together with an electric mixer until it is silky smooth – no lumps!
