Mini Strawberry Cheesecake Bites

These mini strawberry cheesecakes are easy to make (the simple ingredients will surprise you!) and disappear quickly. Everyone of all ages loves this. They’re so cute being mini cheesecakes; just asking to be picked up and put on your plate.

Don’t let the cutie fool you. The texture of these is phenomenal! The cheesecake is creamy and smooth with a buttery crust and the fresh strawberry coating cuts through the sweetness and makes each bite irresistible.

Strawberry mini-cheesecakes are perfect for entertainment. You can do each part one day in advance; the cheesecakes and toppings are then quickly assembled before being served, making them ideal for your next meeting.


2 8oz pkgs cream cheese (softened at room temperature)
-3/4 cup of sugar
-3 eggs (large)
-1 teaspoon vanilla extract
-1 tablespoon of lemon juice (freshly squeezed, if possible)
-Dash or 2 lemon peel (optional)
-Mini Nilla Wafers (REGULAR! None of that LowFat shit..)
-1 can of cake filling of your choice (Strawberry always wins)


Fill a mini cupcake pan with mini inserts and place your mini wafers with the rounded side up.
-Put all the ingredients together: cream cheese, sugar, extract of your choice, eggs, lemon juice and lemon peel, if you choose to use it.
-Create everything together with an electric mixer until it is silky smooth – no lumps!
