NO BAKE COCONUT PECAN PRALINE COOKIES

You can never go wrong with cookies. Seriously, there are so many amazing combinations and settings that you can make a cookie completely change, making it an exciting baking adventure and a great afternoon activity (with or without little helpers)! However, there are times when we don’t feel like turning on the oven, or making, refrigerating and spreading a homemade dough… which is where these particular cookies come into play. You can’t bake them, it’s too easy, and they’re delicious too.
Perfect any time of year, but especially during the holidays, these coconut and nut praline cookies are insanely delicious and addictive. All you have to do is combine the ingredients in a pan, and then mix everything together. Let it cool down a little bit, since you don’t want your cookies to spread too much, then take them out and put them on a lined baking sheet. That’s it! The resulting cookie is perfectly sweet, crunchy, and still light as air, so get going and get these bad boys up – trust us: everyone will love them!

Ingredients:

2 1/2 cups of granulated sugar
1/2 cup evaporated milk
1/2 cup of corn syrup
1 stick (1/2 cup) of salted butter
1 teaspoon vanilla extract
2 1/2 cups of chopped nuts
2 cups sweetened shredded coconut

Instructions:

In a medium sized bowl, combine coconut and nuts; set aside.
In heavy saucepan over medium-high heat, stir in sugar, evaporated milk, corn syrup and butter. Cook and stir until mixture reaches a full boil – bring to a boil and stir for 3 minutes.
Remove pan from heat and add vanilla, coconut and nut mixture. Stir off the heat for about 4 minutes, until the mixture begins to cool and thicken.
Put big spoonfuls in the wax paper. Let it harden completely, between one hour and one hour and a half, before serving.
