OMG Pumpkin Pie Muffins are individual portions of traditional pumpkin pie with a great combination of texture and delicious pumpkin and spice flavor.
15 oz. pumpkin puree
3/4 cup of sugar
1 teaspoon of vanilla
3/4 cup evaporated milk
2/3 cup of flour
1/4 teaspoon baking soda
1/4 teaspoon baking powder
2 teaspoons pumpkin spices
1/4 teaspoon of salt
Preheat the oven to 350 F.
Grease the 12-cup muffin tin.
In a bowl, mix the flour, pumpkin, salt, baking powder and baking soda.
Mix pumpkin puree with sugar, eggs, vanilla and evaporated milk
Add the dry ingredients to the mixture and mix until evenly combined.
Fill the mold with 1/3 of the mixture in each cup.
Bake for 20 minutes.
Let the cakes cool in the mold for 20 minutes, then remove them from the mold and let them cool completely. Store them in the refrigerator.
Cover the muffins with whipped cream and sprinkle with cinnamon or pumpkin pie spices before serving.
