Piña Colada Shakes – vanilla ice cream, coconut cream, rum and crushed pineapple give these drinks a cool, refreshing taste of the tropics that are perfect for the summer heat!
2 1/2 cups vanilla ice cream
8 ounces crushed pineapple in undrained pineapple juice
1/4 cup coconut milk
1/4 cup coconut cream
1/4 cup of rum
Grated and sweetened coconut flakes
whipped cream and maraschino cherries to garnish
Place about two tablespoons of the coconut cream on a small, shallow plate and crumble the coconut into a small, shallow bowl.
Place the edges of the serving glasses into the coconut cream, making sure to place a good amount along the edge.
Place the glasses in the coconut flakes and cover the rim completely.
Put the ice cream, pineapple, coconut milk, coconut cream and rum in the blender.
Blend until completely blended and smooth.
Pour gently into decorated serving glasses, top with whipped cream and a cherry, if desired, and serve immediately.
