RED VELVET CRINKLE COOKIES

Red velvet cookies are one of my favorite Christmas cookies of all time. They are soft, chewy, festive and of course delicious.

INGREDIENTS

3 cups of all-purpose flour
1/4 cup unsweetened cocoa powder
2 teaspoons of baking powder
1/4 teaspoon baking soda
3/4 teaspoon salt
3/4 cup unsalted butter softened
1 1/3 cups of granulated sugar
3 large eggs
1 tablespoon of milk
1 1/2 teaspoons of vanilla
5 teaspoons of red food coloring
1 cup of powdered sugar

INSTRUCTIONS

In a small mixing bowl, beat the dry ingredients, and set them aside.
In the bowl of a stand up (or hand) mixer, whisk the butter and granulated sugar until fluffy.
Mix the eggs one at a time, until they combine after each addition. Mix with milk, vanilla and red food coloring.
Slowly add dry ingredients at low speed and mix only until combined. Cover bowl with plastic wrap and chill 1 1/2 hours or until firm enough to form balls.
Preheat oven to 350 degrees. Pour powdered sugar into a small bowl. Remove dough from refrigerator, take out dough and with buttered hands, shape into balls (about 2 tablespoons each).
Roll the balls in the powdered sugar and cover them evenly. Place the covered balls on a baking tray lined with silpat paper or parchment and flatten them slightly, then bake them in the preheated oven for 13 or 14 minutes.
Once baked, let the cookies rest on the baking sheet for 5 minutes and then transfer to a wire rack to cool completely. Store in an airtight container.
