1 (one) pound of beef tenderloin, cut into thin slices
2 small onions, sliced
2 green peppers, sliced
1 cup barbecue sauce (such as Texas-Style Bold Barbeque Sauce)
8 flour tortillas (10 inches)
2 cups grated cheddar cheese
Preheat the oven to 425 degrees F (220 degrees C).
Heat a skillet over medium heat; cook and stir meat until browned, 5 to 7 minutes. Add onions and green peppers to meat; cook and stir until tender, 5 to 10 minutes. Pour barbecue sauce over meat mixture and simmer until sauce is slightly reduced about 10 minutes.
Place 4 tortillas in a baking dish and cover each one with the meat mixture and Cheddar cheese. Cover each layer of Cheddar cheese with a tortilla.
Bake in preheated oven for 10 minutes; turn quesadillas over and bake until cheese is melted, about 5 minutes more.
