Easy and delicious! These cookies do not require refrigeration!
1 cup (2 sticks or 226g) unsalted butter, at room temperature
1 cup (200g) white granulated sugar
1 large egg, at room temperature
1 teaspoon vanilla extract
1/2 teaspoon almond extract
2 teaspoons of baking powder
3 cups (360g) of all-purpose flour
Preheat the oven to 350° F.
Add butter to the bowl of your stand mixer and place the cream on medium-high heat for 1-2 minutes, or until the butter is soft and lighter in color.
With the mixer on low heat, slowly add the sugar and egg.
Scrape the bowl with the mixer off.
Return the mixer to low heat and add the extracts.
Let all the ingredients combine completely.
Add the baking powder and then the flour, 1/2 cup at a time, until it is completely incorporated.
Remove bowl from mixer and drop dough on floured countertop. Roll out on a flat disk, about 1/8-1/4 inch thick.
Cut cookies into desired shape and bake at 350°F for 6-8 minutes. (Be careful with them! You don’t want burnt edges and every oven is different).
Allow to cool on the cookie sheet until firm enough to transfer to a cooling rack.
