2 tablespoons of vegetable oil
1 onion, chopped
2 cloves of garlic, minced
1 14.5 ounce can of chicken broth
1 18.75 ounce jar of Salsa Verde
1 15.25 ounce can of corn, drained
A 16-ounce can of fire-roasted tomatoes, drained.
1/2 teaspoon of dried oregano
1 pound of shredded chicken 2 cups filled
A 15-ounce can of white beans, drained…

Heat the oil over medium heat in a Dutch oven or large pot and add the onion. Cook for about 5 minutes or until translucent.
Add chopped garlic and cook until fragrant, 3-4 minutes.
Add the broth, salsa verde, corn, tomatoes and oregano.
Bring to a boil and then simmer for 10 minutes.
Add the shredded chicken and beans and simmer for 5 minutes.
Season with salt and pepper to taste.
Garnish with chopped jalapeño and cilantro.
