Meatballs
Combine all meatball ingredients and mix well. Form into ¾” meatballs and place on a baking sheet.
Bake the meatballs at 350˚F for 20 minutes.
Assembly
Whisk together sauce ingredients (except cornstarch and water) and set aside.
Cut vegetables into 1″ pieces, reserve.
Cook onion until slightly softened, about 3 minutes. Add peppers and cook 2-3 minutes more.
Stir in undrained pineapple, meatballs and sauce mixture along with ¼ cup water. Simmer 5 minutes for flavors to combine.
Make a slurry with the cornstarch and water and add enough to thicken. All of the mush may not be needed. Serve over rice.
