Ingredients
12 whole jalapeños
15 T. of cream cheese
1½ lbs. marbled chest
12 strips of coarse-cut bacon
2 T. kosher salt
2 T. of coarse ground pepper
6 ounces of sweet barbecue glaze
Steps
- Cut one side of each jalapeño from the stem to the tip. 2. Cut through the end of the stem; remove seeds and membranes.
- Place jalapeños in a baking dish; bake at 300ºF for 10 minutes. 3. Remove from oven; place jalapeños in a bowl of water with ice to remove extra oil from seeds.
- Cover the inside bottom of each jalapeño with approximately 1 tablespoon of cream cheese; add 2 ounces of the t. Close the pepper around the filling.
- Wrap with bacon; add a pinch of salt and pepper. Place peppers on a baking sheet; bake at 350ºF for about 30 minutes. Remove.
- Apply approximately 1 T. of glaze to each. Serve immediately.
