These are the BEST chocolate chip pumpkin cookies! Soft, moist and full of fresh pumpkin and sweet chocolate chip flavor, this is one of my most popular recipes and it gets rave reviews!
1 cup pumpkin puree (canned)
1 cup of granulated sugar
1/2 cup of vegetable oil (can of canola oil)
1 large egg
1 tablespoon of pure vanilla extract
2 cups of all-purpose flour
2 teaspoons baking powder
1 teaspoon ground cinnamon
1/2 teaspoon pumpkin spices (add an extra 1/2 teaspoon if you like spices)
1/2 teaspoon fine sea salt
1 teaspoon baking soda (optional)
1 teaspoon of milk (optional)
1 1/2-2 cups chocolate chips
Preheat the oven to 350°F. Line a baking sheet with parchment paper or a baking mat. Set aside.
Combine pumpkin, sugar, vegetable oil, vanilla and egg in a large bowl. Stir until smooth.
In another bowl, mix the flour, baking powder, ground cinnamon, pumpkin spice, and salt. For a fluffier cookie, dissolve the baking soda in the milk and mix with the wet ingredients.
Add the flour mixture to the pumpkin mixture and mix only until combined. Finally add the chocolate chips and stir until combined.
Drop cookies by the tablespoon about 2 inches apart. Add a few extra chocolate chips on top if desired.
Bake for 10-11 minutes, or until a toothpick is clean. Allow to cool in the pan for 2 minutes, then transfer to a cooling rack.
