Unstuffed Peppers

Unstuffed Peppers is a delicious one-pot meal filled with fresh and simple ingredients.

Ingredients

1 pound of Italian sausage
1 small onion, diced
2 cloves of garlic
14 ounces of crushed canned tomatoes
14 ounces of diced tomatoes with juice.
½ cup uncooked long-grain white rice
1 ⅔ cup of water or as needed
1 tablespoon Worcestershire sauce
½ teaspoon Italian seasoning
salt and pepper to taste
4 peppers of any color, cut into cubes
½ cup grated mozzarella cheese

Instructions

In a large saucepan, brown the sausage, onion and garlic over medium heat until no pink remains. Drain the fat.
Add tomatoes, rice, water, Worcestershire sauce, Italian seasoning and salt and pepper to taste. Bring to a boil, reduce heat to simmer and cook covered for 10 minutes.
Add diced peppers and cook 15-20 minutes more or until rice is tender.
Stir and add cheese on top. Remove from heat, cover and rest for 10 minutes before serving.

Recipe Notes

Add water as needed until the rice is tender. The rice will absorb the liquid while the mixture rests.
Optional: Roast cheese on top if desired.
