White Chocolate Lemon Truffles

White chocolate and lemon truffles are a delicacy made with creamy white chocolate and sweet lemon flavor. So simple to make and with only 7 ingredients, you can make a batch for a snack or a dessert, for a gift or for a special occasion, but without much time and effort.

INGREDIENTS

1 cup of white chocolate chips
1/2 teaspoon lemon-flavored extract
2 drops of yellow food coloring
1/4 cup of butter
grated peel of 1 lemon
3 tablespoons of heavy whipped cream
1/4 cup of powdered sugar

INSTRUCTIONS

Pour the white chocolate chips into a medium, heat-proof bowl. Add the lemon extract and food coloring. Set aside and have a fine mesh strainer ready next to the bowl.
In a medium saucepan, heat the butter and lemon peel over low heat until the butter melts.
Increase heat to medium and add heavy whipped cream. Beat to combine. Cook until mixture begins to simmer. Do not let it simmer for more than a couple of seconds. Immediately take the pot off the heat and pour the liquid through the strainer (to catch the lemon peel) and over the white chocolate.
Beat immediately until the chocolate melts and the mixture is smooth and creamy.
Cover the bowl and refrigerate until the lemon peel of the white chocolate is cold and firm.
Put the cold ganache in 12 little balls and roll between your hands until it is soft. Roll each ball in powdered sugar.
Chill the truffles in the refrigerator until they are firm, or about 1 hour.
