Apple Dapple Cake

Apple pie is easy, it’s an old recipe for apple pie with apples and nuts, and sweet caramel sauce on top. It would be a perfect cake for Thanksgiving, or any time during the holidays.

INGREDIENTS

For the Cake:
1 ½ cups of vegetable oil
1 ½ cups of granulated sugar
½ cup of brown sugar
3 eggs, at room temperature
1 tablespoon vanilla extract
3 cups of all-purpose flour
1 teaspoon baking soda
2 teaspoons of ground cinnamon
½ teaspoon salt
½ teaspoon ground nutmeg
3 Granny Smith apples, peeled, cored and diced.
1 cup of nuts or pecans, toasted and roughly chopped.

For the caramel sauce:
1 cup of light brown sugar
6 tablespoons of unsalted butter

¼ cup of heavy cream
½ teaspoon vanilla extract
A pinch of salt

DIRECTIONS

To make the cake:
Preheat the oven to 350 degrees F. Grease the base and sides of the 9-inch pan with oil or butter.
In a bowl of a stand mixer, with a paddle, mix the vegetable oil, granulated sugar and brown sugar until well blended.
Add one egg at a time and once mixed, add the vanilla mixture at medium speed until blended.
In a separate bowl, beat the flour, baking soda, cinnamon, salt and nutmeg.
With the mixer on, stir the dry ingredients with the wet ones until they are well incorporated.
Mix the chopped nuts and then the diced apples, if necessary use a rigid spatula to mix them well.
Spread the dough evenly on the prepared pan and bake in the center of the oven at 350 degrees F for 45-50 minutes, or until a toothpick comes out clean.

To make the caramel sauce:
In a medium saucepan over medium heat, whisk together brown sugar, butter, vanilla cream and salt. Bring to a boil over low heat and continue to cook, stirring gently, for 3 minutes.
Remove from heat and pour over top of hot cake
Transfer the cake to a plate and serve
