CAJUN CHICKEN (ONE POT)

A quick and easy recipe for Cajun chicken, homemade with simple ingredients in a pot on the stove in 30 minutes. The tender chicken is covered with sweet and spicy sauce.

INGREDIENTS

2 tablespoons of oil
2 tablespoons of unsalted butter
4 cloves Garlic, finely chopped
2 pounds boneless chicken breast, cut into small 1-inch cubes
2-3 tablespoons Cajun seasoning Adjust to taste preference
Salt to taste
Pepper to taste
1/2 cup low-sodium chicken broth

INSTRUCTIONS

Heat oil and butter in a large non-stick pot or pan over medium-high heat.

Add the chicken and sauté for 1-2 minutes until no longer pink.

Add garlic, Cajun seasoning, salt, pepper, broth and mix until combined.

Cover and cook for 8-10 minutes or until chicken is fully cooked.

Remove the lid and continue cooking until the liquid is reduced to the desired consistency.

Garnish with freshly cut parsley. Enjoy!
