This is an easy salad that is perfect for a hot summer day. When it comes to classic summer salads, it’s hard to beat this recipe for marinated cucumbers, onions and tomatoes… It just tastes like summer! This particular recipe is from Womack House, a long time country kitchen in Fulshear, TX.
1 cup of water
1/2 cup distilled white vinegar
1/4 cup vegetable oil
1/4 cup of sugar
2 teaspoons of salt
1 tablespoon fresh black pepper, coarsely ground
3 cucumbers, peeled and cut into 1/4 inch thick slices
3 tomatoes, cut into pieces
1 onion, cut and separated into rings
Beat the water, vinegar, oil, sugar, salt and pepper in a large bowl until smooth; add the cucumbers, tomatoes and onion and stir to coat.
Cover the bowl with plastic wrap; refrigerate for at least 2 hours.
