Christmas Maraschino Cherry Shortbread Cookies

Maraschino cherry butter cookies – make these classic butter cookies with red chunks of Maraschino cherries, and you’ll have a beautiful Christmas dessert. These colorful cookies are the simplest recipe to follow, and a sweet way to celebrate with your family!

Ingredients

1 cup unsalted butter at room temperature
1/2 cup of powdered sugar
1/2 tablespoon vanilla extract
2 cups of all-purpose flour
1/2 teaspoon of salt
3/4 cup chopped maraschino cherries (smear cherries on a paper towel to drain well or you can use candied maraschino cherries)
2/3 cup of chocolate chips

Instructions

Mix the flour and salt, set aside.
Cream 1 cup of soft unsalted butter with 1/2 cup of powdered sugar, mix with vanilla.
Add the flour and salt mixture and mix until it begins to form larger groups.
Mix with chocolate chunks and maraschino cherries.
Form the dough into the trunk and press it well or it will crumble when you slice the cookies (the trunk should be about 2 centimeters thick). Wrap it in plastic and refrigerate it in the refrigerator for at least 1-2 hours.
Preheat the oven to 325 F and line the baking sheet with parchment paper.
Cut the log into 1/4 or 1/3 inch thick slices (if the slices fall apart, press them down with your hands) and place them on a baking sheet with one inch of space between them.
Bake the cookies for 10-15 minutes (until they start to get slightly brown on top)
Allow to cool for 5 minutes on a baking sheet before placing on a shelf to cool completely.
